I really like cutting open the pomegranate and seeing the gorgeous seeds. The pomegranate can be used as the first fruit we are essential to consume on Rosh Hashanah. It is also mentioned that it is made up of 613 seeds just as there are 613 mitzvot. And, when we eat pomegranates on Rosh Hashanah we wish that our very good deeds in the new yr will be as plentiful as the seeds of the pomegranate.
